Ingredients
1 lb short pasta noodles, boiled and chilled
1/2 cup extra virgin olive oil
2 Tbs red wine vinegar
1/2 tsp salt
1/2 tsp black pepper
1/4 lb fresh mozzarella, cubed
1/2 cup snow peas, halved
1/2 cup sun-dried tomatoes, thinly sliced
1/2 cup artichoke hearts, quartered
1/4 cup kalamata olives, pitted and halved
1/4 cup fresh basil leaves, thinly sliced
1/4 cup Fisher® Pine Nuts
Directions
- Place pasta in a large mixing bowl. Toss with olive oil, vinegar, salt and pepper. Add mozzarella, peas, tomatoes, artichoke hearts, olives, basil and pine nuts.
- Carefully toss with tongs to evenly distribute the ingredients. Refrigerate salad for at least 1 hour before serving.
